Recipe Hunting

To anyone who knows me or has ever had a meal with me, I don’t particularly care for vegetables.   As such, taking on the Paleo-diet was going to bring an extra challenge to find foods that I wanted to eat which had vegetables. I also had no idea how to cook vegetables. Thus, the hunt was on.

What in the hell is that?

My wonderful roommate, who has a diet site of her own, has a plethora of cook books that I poured out on the table and started going through. I started with this book.

Hungry Girl Book

A lot of their recipes would have been fantastic — if I had been able to eat bread or dairy, but unfortunately I had to pass by a lot of really good things. However, I did find some good soups and good salads and even one tasty chicken recipe.

  • Merry Marinated Veggies (party tray)
  • Bestest Baked Apples
  • Super-simple tropical sorbet
  • Butternut squash fries (actually pretty excited to try this)
  • Butternut hashbrowns
  • EZ Tomato-basil Chicken (nom. that is my next dish to cook)
  • Too-good two-berry citrus smoothie
  • Freezy cool lemon slushie
  • Mango-Tango slushie
  • Egg Flower Power Soup
  • Perfect Plum tomato cabbage soup
  • Spicy Tomato soup
  • Buffalo Chicken choppity-chop (salad)
  • Retro-riffic chopped Chef Salad

All of those things sounded really good to me. I’ll be sure to share the results as it happens.

Speaking of trying new things… I would like to introduce to you my first vegetable of the month!

The Carrot!

Most people I know like carrots, but, even when I was younger, I really didn’t like them. However, in the spirit of new beginnings, I decided to give the carrot another chance this month.

The first attempt I  made was to simply eat it raw.

Ew.

I found the taste really odd and way too hard to chew. There was way too much effort for too little reward.

However, I was not going to give up! I gave carrots another chance this very evening by putting them in my magic salad.

The texture was till weird. I chopped them up into small circles rather than grating them, mostly because I was hungry and I was working with baby carrots.  They were still hard to bite into, but their taste was effectively masked by the vinegar and other tasties. I am not sure if they will take that form in the magic salad again, but we will see. I’m trying to look for good ways to cook carrots that can help me get past that really weird texture.

Anyway, today I ate a very tasty green apple, had a bowl of chili, and I just finished my magic salad. I walked to CVS and back, and also practiced for my Taekwondo belt test.

I am feeling pretty good right now, especially because I found something in the freezer that, pending approval from my roommate, could be a very tasty addition to my “allowed” foods.

I need to work on my "questioning" face...
